Pregunta muy interesante y que me apunto pues está dentro de las próximas cuestiones que tengo en mente, en el ámbito de los sensores.
En mi caso se trata más de la presión del aceite (aspecto sumamente debatido), más que de la temperatura, pero para el caso, está en el mismo ámbito.
Supongo que tendrás ya identificado el de la presión, pues estás preguntando por el de la temperatura (un escalón más).
Te comento lo que tengo previsto para el de la presión, que puede ser válido para la temperatura, o al menos, complementario.
Te pido también, dado que tienes el motor fuera, que discutas aquí también si tienes algo de la presión, pues como digo, está en la lista de los "poyaque" míos.
Como sabes, al lado del filtro del aceite (y más si son 3.9 como en tu caso), están las tomas que permiten el acople de sensores.
En mi caso, nada mejor como el clásico Workshop manual, que indica como adaptar el sensor de presión del aceite en el taller, y aclara además la presión de trabajo:
TEST
1. Place the vehicle on a suitable hoist.
2. Disconnect the battery negative terminal,
3. Remove the bolt from the oil pump housing and install adaptor LST502-1.
4. Fit pressure guage 18G502A to hose 18G502K, fit the hose and guage to adaptor LST502-1. Tighten all joints securely.
5. Connect the battery terminal and ensuring that the park brake is applied and that ‘PI or IN’ is selected in the main gearbox start and run the engine. Run the engine until normal engine operating temperature is achieved (thermostat open).
6. With the engine speed maintained at 2400 rpm there should be a minimum engine oil pressure of 1.76 kg/cm’ (25 p.s.i.)

Esta imagen la tendrás mas que archirevisada, y aquí es donde se pueden adaptar los sensores, al menos de presión.
Pero creo que podrás instalar también el de temperatura.

From late 1994, a redesigned timing cover, incorporating an integral crank-driven oil pump, is fitted to Land Rover V8 engines. This supersedes the earlier, distributor-driven oil pump. However, the later arrangement, while more efficient, is not a straight swop for the earlier timing cover, as a longer crankshaft nose is required to drive the oil pump. In addition, ancillaries, such as water pump, alternator and power steering pump would have to be changed, due to the serpentine drive belt.

Additional gauges
I added a three gauge pod with some Cyberdyne gauges to provide me with some extra protection.
I added oil pressure and water and transmission temperature sensors. The gauges have a numeric led display.
I used the 12V positive going to the cigar lighter for an easy place to tap switched power and fed all the wires up through the vent on the dash. The pod is secured to the vent with bolts coming up through and a washer and nut on the top.
The Bosch 4.6 front cover has an extra port with a screw in plug right above the oil pressure sensor.
I took this plug and tapped it so I could thread in some NPT fittings for a real oil pressure gauge. I also swapped this plug to the bottom hole and the stock sensor I put in the top hole so I would have more room for the new oil pressure sensor.

Como bien dice el Maestro Naredo, apunta que no hay sensor donde colocar el reloj de temperatura de aceite, pero no hay miedo si hubiera que hacerlo, en hacer un buen taladro, especialmente en el carter, (que siempre puedes sustituir facilmente.) para poner el sensor a tu gusto.
Supongo que aquí podrás adaptar el que quieras.
